Quinoa Salad
  • 1 c. quinoa
  • 1 can black beans, drained and rinsed
  • 1/2 bunch green onions, chopped
  • 1 red pepper, minced
  • 1/3 c. chopped fresh parsley
  • 1/2 tsp. cumin
  • 1/2 tsp. salt
  • 1 avocado, diced
  • 1/4 c. lime juice
  1. Put quinoa in a fine sieve and rinse well in running water.
  2. Place in a saucepan, cover quinoa with 2 cups water, bring to boil then simmer 15 minutes, covered on low heat.
  3. Drain any unabsorbed water and cool while preparing rest of vegetables.
  4. Mix diced avocado with lime juice before adding to salad. Toss all ingredients to mix well.
