Eggless Egg Salad
  1. Mash brick of tofu to medium fine.
  2. Blend in Vegenaise and seasoning.
  3. Refrigerate overnight for a more yellow color.
  4. Serve on bread with onion slices or tomatoes.

NOTE: Vegenaise can be found at most Health food stores.

Tofu Mayonnaise
Tofu Mayonnaise
  • 1 pound silken tofu, drained
  • 1/4 tsp. garlic powder
  • 1/4 c. fresh lemon juice
  • 1 tbsp. Agave
  • 2 tsp. onion powder
  • 1 tsp. salt
  • 1/2 tsp. dried dill weed
  1. Process all ingredients, except dill weed, in a blender until very smooth.
  2. Add dill weed and process just until mixed.
  3. Keep refrigerated in an airtight container.

Yields 2 cups or 32 servings.
