Four Bean Salad
  • 15 oz. can kidney beans, drained and rinsed
  • 1 package frozen green soy beans, cooked
  • 15 oz. can white beans, drained and rinsed
  • 2 c. green beans, cooked
  • 1 small red onion, thinly sliced
  • 1 red bell pepper, minced
  • Italian Style Salad Dressing (See Recipe)
Cool soy beans and green beans, then toss with remaining ingredients.

Italian Style Salad Dressing

Italian Style Salad Dressing
  • 1/3 c. lemon juice
  • 2/3 c. water
  • Small piece of onion
  • Sprig parsley
  • 1 clove garlic
  • 1/4 tsp. each dried basil, oregano
  • 1/2 tsp. salt
  • 2 tbsp. honey or Agave
  • 1/2 tsp. Guar Gum Powder
  • 2 tbsp. red pepper, minced

Here’s an Italian dressing that beats all ”no fat” commercial dressings.

The guar gum is a nutritious thickener and can be found at your favorite natural food shop or you can order from Weimar’s Catalog Sales Department. An easy and flavorful dressing for bean, pasta, tossed green salads

  1. In blender place all ingredients, except guar gum and red pepper, and whiz to mix well.
  2. Add guar gum while blender is running.
  3. Add the red pepper last and pulse briefly.
  4. Refrigerate 1/2 hour to allow the guar gum to thicken the dressing.

NOTE: for Creamy Italian, omit the guar gum and add 1/4 cup soft tofu when blending.
