Southwest Bean Salad
  • 2 15 oz. cans black beans, drained and rinsed
  • 1/2 c. finely chopped red onion
  • 1 green bell pepper, diced
  • 2 c. frozen corn kernels
  • 2 tomatoes, diced
  • 3/4 c. chopped fresh cilantro
  • 2 minced garlic cloves
  • 3 tbsp. lime juice
  • 2 tsp. cumin
  • 1 tsp. coriander
  • 1/4 tsp. paprika
  1. In large bowl, combine beans, red onion, bell peppers, corn, tomatoes and cilantro.
  2. Blend together garlic, lime juice, cumin, coriander and paprika.
  3. Pour over salad and toss gently.
