Cranberry Salad
  • 3 c. fresh cranberries
  • 1 apple, cut into chunks
  • 1/2 c. golden raisins
  • 1 tbsp. grated orange rind
  • 1 orange, peeled and seeded
  • 1 can crushed pineapple, 20 oz.
  • 1/4 c. orange juice concentrate
  1. Place cranberries, orange, apple raisins, and grated orange rind in food processor, and chop until fairly fine.
  2. Add orange juice and pineapple.

NOTE: If served for breakfast you can add a few chopped walnuts just before serving.
