Noodles and Vegtables with Peanut Sauce
  • 8 oz. brown rice noodles
  • 1/3 c. peanut butter
  • 1 tbsp. Bragg Liquid Aminos
  • 2 tsp. lime juice
  • 1 tsp. mild chili powder
  • 1 clove garlic, minced
  • 1/2 tsp. maple syrup or Agave
  • 1 red pepper, cut into thin strips
  • 3/4 c. chopped seeded cucumber
  • 3 green onions, sliced into 1/4" pieces
  • 2 tbsp. chopped cilantro
  1. Cook noodles according to package directions then drain and return to pot.
  2. Combine peanut butter, 1/4 cup water, Liquid Aminos, lime juice, chile powder, garlic and syrup in a small bowl; whisk until blended.
  3. Thin sauce with a little of the noodle cooking water until the it has the consistency of cream.
  4. Add bell pepper, cucumber, and green onions to noodles and stir.
  5. Stir in Peanut Sauce (see recipe) and toss well.
  6. Remove to serving dish and sprinkle with cilantro.

Serves 4.

Peanut Sauce
  • 1 c. smooth peanut butter
  • 1/4 c. chopped cilantro
  • 1 c. hot water
  • 3 tbsp. maple syrup or Agave
  • 2 tbsp. LiquidAminos
  • 2 tsp. lime juice
  • 2 cloves garlic, minced
  • Salt, to taste
  1. Whisk peanut butter with 1 cup hot water in bowl.
  2. Stir in remaining ingredients.
  3. Taste and adjust for salt.

NOTE: Agave nectar has a glycemic index of about 11 and is a better choice for diabetes patients.
