Tofu Vegetable Stir Fry
  • 1/4 c. coarsely chopped onion
  • 2 garlic cloves, minced
  • 2 tbsp. water
  • 8 shiitake mushrooms, soaked, cleaned and sliced
  • 1 stalk broccoli, in bite-size pieces
  • 1 c. carrots, sliced
  • 1 c. extra firm tofu cubes
  • 2 tsp. Braggs Liquid Aminos
  • Bill's Best Beef Seasoning to taste
  • 2 tbsp. cornstarch
  • 2/3 c. water
  1. Steam onion and garlic with water.
  2. Add shiitake mushrooms and stir-fry for about a minute until flavorful.
  3. Add broccoli, carrots, tofu cubes, Liquid Aminos and seasoning and continue cooking.
  4. When vegetables look half done, mix cornstarch with water and pour it over the vegetables, stirring as it thickens.
  5. Continuing simmering for 2 to 3 minutes. Serve over brown rice.
