Pita Bread Pocket Sandwich
  • Roasted Red Pepper Hummus (see recipe)
  • Tomato slices
  • Onion slices
  • Cucumber slices
  • Avocado wedges
  • Lettuce
  • Sprouts
  • Whole wheat pita bread
  1. Fill pocket with Roasted Red Pepper Hummus, tomato, onion, avocado and cucumber.
  2. Sprouts or lettuce complete the sandwich.

Roasted Red Pepper Hummus

Roasted Red Pepper Hummus

  • 1 15 oz. can garbanzos
  • 3 tbsp. fresh lemon juice
  • 1/4 c. tahini (sesame seed butter)
  • 2 cloves garlic
  • 1 roasted red pepper (canned or freshly roasted)
  • 1/2 tsp. onion powder
  • Sprig fresh parsley
  1. Drain liquid from garbanzos, reserving for later.
  2. In a food processor place garbanzos, lemon juice, tahini, garlic, red pepper and onion powder.
  3. Blend until smooth and creamy, adding only enough liquid as necessary for desired texture.
  4. Add parsley last and process until chopped. Yield: 2 cups.
