Soybean Casserole
  1. Soak about 3/4 cup of dry soybeans and 3 cups water overnight to get 2 cups of soaked beans.
  2. Drain beans and place in blender with all of the above ingredients except chopped onion.
  3. Process until beans are well chopped into tiny pieces.
  4. Pour into a 1-quart casserole dish and stir in onions.
  5. Bake 1 hour at 350º F. Makes 3 servings.
