Sun Burgers (gluten free)
  • 2 c. sunflower seeds
  • 1/2 c. brown rice flour
  • 1 tbsp. onion powder
  • 1 tsp. salt
  • 1/2 c. onion, finely chopped
  • 2 c. finely grated carrots
  • 1 c. tomato sauce
  1. In a food processor, mix seeds, flour, onion powder and salt until seeds are finely ground into powder. Remove to a mixing bowl.
  2. Cut onion pieces into small chunks and add to processor to finely chop. Remove to bowl with dry ingredients.
  3. Cut carrots into 1” chunks Place in processor to finely grind. Add to bowl with all other ingredients including tomato juice, stirring to mix well.
  4. Form into patties. Brown slowly (275º) in non-stick skillet or place on sprayed cookie sheet and bake in oven at 375° for 15 minutes on one side. Turn and bake another 15-20 minutes on the other side till lightly browned. These freeze well.
