Zucchini Burgers

A great summer recipe when all that garden squash is available.

  1. Place zucchini in a medium size bowl. Mix well with Bill’s Best Seasoning and salt. Set aside while you chop the vegetables.
  2. In another medium size bowl mix together the flour, oats, walnuts, and yeast flakes.
  3. Stir in the chopped vegetables then combine with seasoned zucchini, mixing well.
  4. Form burgers with a large-mouth ring jar lid to make burger size patties.
  5. Place on sprayed cookie sheet and bake at 350° for 15 minutes on one side.
  6. Turn and bake another 15-20 minutes on other side till lightly browned. These freeze well.

Makes 8 patties
