Succotash with Edamame

Succotash with Edamame
  • 1 small diced zucchini
  • 1/2 diced red pepper
  • 1/2 c. chopped green or red onion
  • 1 package shelled green soy beans, cooked
  • 2 c. frozen corn kernels
  • Herbs to taste, such as fresh parsley and basil

Toss together and serve room temperature for salad. Stir fry in a hot skillet for a couple minutes for a hot dish.

Serves 8
