Orange Yams
  • 5 medium-size yams (or sweet potatoes)
  • 1 c. water
  • 1/2 c. orange juice frozen concentrate, thawed
  • 1/4 tsp salt
  1. Clean and steam yams until tender.
  2. Peel, slice and arrange in a baking dish. Mix water, orange juice and salt and pour over yams. Best if left to stand overnight in refrigerator before baking.
  3. Bake 350° F. for 30 minutes.
