Sweet and Sour Tofu with Vegetables
  • 1 red pepper
  • 1 onion
  • 1 clove garlic, minced
  • 1 c. diced eggplant or other vegetable (such as celery, baby corn, summer squash, etc.)
  • 1 can sliced water chestnuts
  • 1 c. pineapple chunks
  • 1/4 c. water
  • 2 tbsp. cornstarch
  • 1 c. pineapple juice
  • 1/4 c. Date Sugar or apricot fruit spread
  • 3 tbsp. homemade ketchup or tomato sauce
  • 1/2 tbsp. lemon juice
  • 1 tbsp. Bragg LiquidAminos
  • Pinch garlic powder
  • 1 c. tomato wedges
  • 1 c. cubed extra firm tofu
  • Cooked rice or noodles
  1. Slice pepper into bite-size chunks and onions vertically into petals. Steam vegetables and pineapple in water until tender-crisp.
  2. Meanwhile, dissolve cornstarch in pineapple juice and add to steaming vegetables.
  3. Add remaining ingredients except tomato wedges, tofu and rice. Bring to boil stirring constantly until thickened.
  4. Fold in tofu carefully. Continue to heat until tofu is warm. Garnish with tomato wedges. Serve over rice or noodles.
