Curried Couscous with Vegetables
  • 3 c. vegetable broth, or 3 c. water
  • 1 tbsp. Bill's Best Chik Nish seasoning
  • 1 medium onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 tsp. chopped or grated fresh ginger
  • 1 tbsp. curry powder
  • 1/2 tsp salt
  • 1 c. frozen corn
  • 1 c. frozen peas
  • 1 c. whole wheat couscous
  • 1/2 c. raisins or currants
  • 3 tbsp. pine nuts
  • 2 tbsp. chopped cilantro or parsley, for garnish

Couscous is a tiny pasta commonly used in Moroccan cuisine. Be sure to look for the whole wheat variety. This is a quick recipe that can be put together in about 15 minutes.

  1. To a large pot add broth, onion, garlic, ginger, curry powder, and salt. Bring to a boil, add corn to cook for 2 minutes.
  2. Remove from heat and stir in peas, couscous, raisins and pine nuts. Mix and let sit covered 5 to 10 minutes.
  3. Before serving, sprinkle with cilantro.
