Tofu with Spinach
  • 1 lb. firm tofu, cut into cubes
  • Bill's Best Chik Nish seasoning to taste
  • 1 tsp. cumin seed
  • 1/2 c. diced onion
  • 1 tbsp. minced garlic
  • 1 bunch fresh spinach, washed well, cut into 3/8
  1. Lightly season cubed tofu with Bill’s Best Chik’Nish, tossing well. Place in a single layer on a sprayed baking sheet and bake at 400° until lightly browned. When brown, remove to a covered dish to keep warm.
  2. Stir cumin seeds in a hot fry pan or wok to toast. Add onion and garlic, and cook till soft, adding a little water if necessary to prevent sticking.
  3. Add spinach and toss. Cover and cook 2 minutes.
  4. Stir in the tofu cubes and cook 1 more minute.
