Indonesian Yellow Rice
  • 1 c. long grain brown rice
  • 1 c. coconut milk
  • 1 c. water
  • 1/8 tsp. turmeric or a couple strands of saffron
  • 1-inch piece fresh ginger, grated
  • 1 tsp. salt, or to taste
  • 1 tsp. Bill's Best Chik Nish seasoning
  • 1/4 tsp. finely chopped lemon grass or finely grated lemon zest
  1. Place all ingredients in a saucepan and bring to a boil.
  2. Reduce to low heat and continue to cook till all liquid is absorbed, (about 1 hour).
  3. Let stand a few minutes before serving.

NOTE: If using lemon zest, add this at the end of cooking time.
