Lentil Stew
  • 1/2 c. celery chopped
  • 1 onion chopped
  • 1 c. carrots, sliced
  • 2 c. potatoes, diced
  • 1 c. dry lentils
  • 1 tsp. salt
  • 2 tbsp. parsley
  • 1 qt. water
  • 1/2 tsp. thyme
  • 1 can tomatoes (1 ib. 12 oz.) chopped
  1. Place all ingredients in saucepan except tomatoes.
  2. Cook for about 1 hour.
  3. Add tomatoes to cook last 15 minutes.
