Baked Wild Rice Provencal
  • 2 1/2 c. water
  • 1 1/2 c. basmati and wild rice mix
  • 1 1/4 c. chopped onions
  • 2-3 cloves garlic, minced
  • 1 tsp. crushed dry basil
  • 1 tsp. crushed dry oregano
  • 3/4 tsp. salt
  • 1 tbsp. vegetable broth powder

Adapted from Arrowhead Mills Cookbook

  1. Wash rice in a strainer.
  2. Brown rice lightly in a dry skillet, stirring constantly (this step is optional).
  3. Combine the onions, basil, oregano, salt, vegetable powder and water in a baking dish.
  4. Add the rice and mix well. Cover and bake 350° F for 1 hour.
  5. Uncover the rice and top with tomato slices.
  6. Cover and return to oven and bake for 15 minutes more.
