Southeast Asian Chilled Noodles
  • 4 oz. whole wheat angel hair or brown noodles
  • 1 tsp. seasame oil
  • 1 1/2 c. shredded Chinese cabbage
  • 2 carrots cut julienne strips
  • 1 cucumber, seeded and cut into 1/4" dice
  • 1 tsp. minced fresh ginger
  • 1 stalk lemon grass, trimmed and minced
  • 1/4 c. chopped cilantro
  • 2 tsp. maple syrup
  • 3 tbsp. lime juice
  • 1 tbsp. soy sauce or LiquidAminos
  • 2 tbsp. chopped dry roasted peanuts
  1. Cook the noodles according to package directions until al dente. Drain well.
  2. Transfer noodles to a salad bowl and toss with sesame oil.
  3. Stir in cabbage, carrots, cucumber, ginger, lemongrass, and half the cilantro.
  4. Mix together syrup, lime juice, and soy sauce and add to salad, tossing well.
  5. Garnish with remaining cilantro and peanuts.
