Spinach Stuffed Manicotti


  • 1 lb. firm or extra firm tofu
  • 1 bunch fresh spinach or 1 package frozen spinach, chopped
  • 1-2 cloves garlic, minced
  • 1 tbsp. lemon juice
  • 1 tbsp. Yeast Flakes
  • 1/2 tsp. salt
  • 6 cooked manicotti shells
  • 2 c. or more, spaghetti sauce


Just the dish to prepare when you’re having company for dinner. The tofu replaces ricotti cheese and they’ll never know the difference.

  1. Drain tofu well. Mash until the texture of cottage cheese.
  2. Simmer spinach and garlic in a small amount of water. Do not overcook.
  3. Chop spinach until fine and drain. Combine with tofu and mix well.
  4. Add seasonings and adjust to taste. Stuff the manicotti with filling and place in a baking dish.
  5. Pour spaghetti sauce over the top and bake at 350° F until heated through.

Variations: Use lasagna, pasta shells or crepes instead of manicotti.
