Tofu Meatballs

Tofu Meatball

 

  • 1 lb. tofu, mashed
  • 2/3 c. dry bread crumbs (made from whole wheat bread)
  • 1 tbsp. peanut butter
  • 1/3 c. chopped fresh parsley (or 1/2 the amount dried)
  • 2/3 c. finely minced onion
  • 1/2 c. finely chopped pecans or walnuts
  • 2 tbsp. Yeast Flakes
  • 1 tsp. Italian seasoning
  • 1 tsp. basil
  • 1/4 tsp. garlic powder
  • 1 tsp. salt (or to taste)

 

  1. Mix all ingredients very well.
  2. Form into small balls and bake at 350 degrees for 20 minutes

Note: This recipe is an excellent sandwich spread uncooked
