Cashew Rice Loaf

 

  • 1 c. cashews, finely ground or almond or pecan meal
  • 1 med. onion, finely diced & sauteed
  • 1 c. soft whole wheat bread crumbs
  • 1 c. brown rice, cooked
  • 3/4 c. rice or soy milk
  • 2 tbsp. LiquidAminos
  • 2 tbsp. Yeast Flakes
  • 1 tbsp. parsley, dried
  • 1/2 tsp. celery salt
  • 1/2 tsp. salt or to taste

 

  1. Mix all ingredients together in a large bowl.
  2. Lightly pack mixture in an oiled, small, loaf pan and bake at 350 degrees for 40-60 min or until the loaf is firm.
  3. Turn out of pan onto a serving dish. Garnish with fresh parsley.
