Mashed Potatoes

 

  • 3 lb. russets, peeled or yukon gold potatoes, unpeeled
  • 1 tsp. salt
  • 1 1/2 tsp. onion powder
  • Dash of garlic powder
  • 2 1/2 c. soy milk, plain

 

  1. Cook or steam potatoes.
  2. Put potatoes in mixing bowl and mix on high until smooth.
  3. Turn to low speed and add soymilk, salt, and onion powder.
  4. Mix until creamy.

Yield about 8 cups.
