Chili Beans

 

  • 1 1/2 c. beans, dry (red and pinto)
  • 1 c. onions, chopped
  • 2/3 c. green peppers, chopped
  • 1/4 c. carrots, grated
  • 2-3 oz. green chili peppers
  • 1 c. tomatoes, crushed
  • 1 tsp. cumin
  • 1/2 tsp. oregano
  • 1 tsp. salt
  • 1 1/2 tsp. paprika
  • 3 cloves garlic

 

  1. Soak beans overnight in 4 c water.
  2. Cook on stove top or in pressure cooker until tender
  3. Sauté onions, peppers and carrots in a little water.
  4. Combine all ingredients and cook until flavors are well
    blended.

Makes 5 or 6 cups
