
Fresh Strawberry Pie

4 pt. strawberries

1 c. pineapple (or apple) juice frozen concentrate, thawed

1 c. raspberry juice frozen concentrate, thawed

1/2 c. water

6 tbsp. cornstarch

1 tbsp. lemon juice
-
2 baked and cooled crumb pie crust

Stem and wash berries. Place frozen concentrates in saucepan.

Mix cornstarch with water and add to juice.

Bring to a boil, stirring constantly, and cook until mixture is thick and clear.

Remove from heat. Add lemon juice.

Mix with strawberries and place in prepared crusts, dividing berry mixture evenly.

Chill and garnish with coconut whipped topping. Makes two pies.
