Coconut Tapioca Pudding

 

  • 1 quart coconut milk, or other milk of choice
  • 1/3 c. honey
  • 1/3 c. small pearl tapioca
  • 1 tsp coconut extract
  • 1 tsp. vanilla
  • Pinch of salt

 

  1. In a large saucepan, mix all ingredients well.
  2. Bring to a boil, stirring frequently.
  3. Turn heat to medium and continue cooking and stirring until tapioca pearls are no longer white, but clear.
  4. Chill, stirring occasionally to blend tapioca evenly throughout pudding.

Serves 8
