Lemon Pineapple Cream Pie

 

  • 2 c. pineapple juice
  • 1/2 c. water
  • 1/3 c. cornstarch
  • 3 tbsp. fresh lemon juice
  • 2 tbsp. orange-pineapple juice concentrate
  • 1 tbsp. Agave
  • 1/2 tsp. grated lemon peel
  • 1 baked crumb pie crust

 

  1. Place pineapple juice in medium saucepan. Dissolve cornstarch in water and add to saucepan.
  2. Bring to a boil, stirring until thickened and bubbly. Remove from heat.
  3. Add juices, agave and lemon peel and mix well.
  4. Cool slightly before pouring into crust. Refrigerate until firm.
  5. Top with coconut whipped topping if desired. Serves 8.
