Apple Raisin Mince Pie

 

  • 1 whole orange, juice and rind
  • 1 c. dark raisins
  • 1 c. light raisins
  • 1/2 c. finely chopped dates
  • 2 apples washed, cored and finely minced
  • 1 tbsp. cornstarch
  • 3/4 c. apple juice concentrate
  • Pinch salt
  • 1 unbaked 9" pie crust

 

  1. Preheat oven to 375° F.
  2. Scrub the orange well. Cut in half, remove seeds and grind in food processor.
  3. In a medium saucepan, mix all the fruits. Add cornstarch to apple juice and mix to dissolve; add to saucepan.
  4. While stirring constantly, cook over medium heat until juice is thickened. Pour into pie crust.
  5. Bake 40 minutes on bottom rack in oven. Delicious served slightly warm.
