Pecan Pie

 

  • 1 c. Agave
  • 1/2 c. maple syrup
  • 1 tbsp. vanilla
  • 1 c. soy milk
  • 1/4 c. corn starch
  • Pinch of salt
  • 1 1/2 c. toasted pecans
  • 1 baked and cooled Crumb Pie Crust

 

  1. Place all ingredients, except the pecans and crust, into blender or food processor and blend until smooth.
  2. Put blender liquid in a medium saucepan to boil, stirring until thick and bubbly.
  3. Pour into pie crust and spread pecans evenly over pie, pressing onto filling gently.
  4. Chill before serving. Filling will continue to set and become firm while chilling.

Serves 8
