Pecan Tart

 

  • 1 c. maple syrup
  • 1/2 c. rice syrup
  • 1 tbsp. vanilla
  • 1 c. soy milk
  • 3 tbsp. corn starch
  • 2 c. toasted pecans
  • 1 unbaked pie crust

 

  1. Place all ingredients, except the pecans and crust, into blender or food processor and blend until smooth.
  2. Pour blender liquid into a medium saucepan to boil, stirring until thick and bubbly. Add pecans to mixture and pour into pie crust.
  3. Bake 350° for 45 minutes. Filling will continue to set while chilling.
