Holiday Pumpkin Pie


  • 14 oz. Mori Nu Firm Tofu
  • 3/4 c. natural maple syrup
  • Favorite pumpkin pie spices
  • 15 oz. can pumpkin puree
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • Pinch turmeric (opt.)
  • 1 unbaked 9'' pie crust


The holiday pie recipe from MoriNu Tofu company is easy and scrumptious. Here is our adaptation.

  1. Preheat oven to 425° F.
  2. Place tofu and maple syrup in blender or food processor with vanilla, salt and spices and blend well until smooth and creamy.
  3. Add pumpkin to blender to mix if it is large enough. Otherwise put pumpkin in a medium mixing bowl and add blender contents, whisking until well mixed.
  4. Pour into unbaked pie shell and place on bottom rack in oven. Bake 15 minutes at 425°, then lower heat to 350° and bake another 50 minutes. Filling will be soft, but will become firm as it chills.

NOTE: If you use soft tofu, add 3 tablespoons cornstarch to the blender with tofu and maple syrup.
