Peach or Blueberry crisp

 

  • 6 c. frozen (or fresh) chopped peaches
  • 1 c. frozen peach juice concentrate
  • 1 c. water
  • 1/2 c. dates
  • 1/8 tsp. almond flavor
  • 2 tbsp. tapioca
  • 2 or 3 c. granola

 

  1. Place fruit in 9 X 13” casserole dish.
  2. In a blender process juice, water, dates and flavoring until smooth. Add tapioca and pulse to mix. Pour sauce over fruit.
  3. Bake 350° for 25 minutes. Add granola or pie crust topping and bake another 10 minutes. Serves 8.

NOTE: Blueberry Variation: Substitute 6 cups blueberries for peaches, use berry juice concentrate and 1/4 teaspoon allspice instead of almond flavoring.
