Mango Dessert Soup

 

  • 14 oz. can light coconut milk
  • 1/4 c. maple syrup
  • Pinch salt
  • 2 large, ripe mangoes, peeled and coarsely chopped, or 2 c. frozen
  • 2 tbsp. fresh lime juice
  • 2 tsp. grated lime zest
  • 1 kiwi, peeled and sliced
  • Mint for garnish

 

A quick, easy dessert which compliments Asian food.

  1. In a blender place the coconut milk, syrup, salt, mangoes and lime juice. Puree until smooth. Add lime zest and pulse once.
  2. Chill. Serve in sherbert glasses garnished with kiwi and mint.
