
Carob Peanut Butter Tart

12.3 oz. package extra-firm silken tofu

1/2 c. carob powder

1/2 c. maple syrup

1 1/4 tsp. vanilla

1/2 c. smooth natural peanut butter

1/8 tsp. salt

2 tbsp. chopped, dry roasted peanuts

1 baked and cooled Crumb Pie Crust

Place all ingredients except peanuts and pie crust in a food processor or blender and process until very smooth.

Pour into cooled crust and smooth the top. Garnish with roasted peanuts.

Chill and serve. May be frozen and served later. It is also delicious served partially thawed.
