Pineapple Cream

 

  • 1 c. cashews
  • 2 c. crushed pineapple
  • 1 1/2 c. pineapple juice
  • 5 tbsp. cornstarch
  • 1 tsp. vanilla
  • Pinch of salt
  • 1 tbsp. Agave (opt.)

 

  1. In a blender, process cashews with pineapple until nuts are creamy smooth.
  2. Add remaining ingredients, mix well.
  3. Pour into saucepan and boil until thickened. Use like whip cream.
