Blueberry Pie Filling

 

  • 4 c. fresh or frozen bluberries
  • 1 tsp. vanilla
  • 1/4 c. pineapple juice or water
  • 3-4 tbsp. cornstarch
  • 1 can (20 oz.) unsweetened crushed pineapple

 

This pie filling not only satisfies your sweet tooth but provides a nutritional bonus! Blueberries are packed with bioflavonoids, and therefore very high in antioxidants, which makes them great immune system builders. They are also one of the highest foods in fiber and pectin, so very good for your digestive system. Relish every bite!

  1. Combine berries, pineapple and vanilla in large saucepan and cook over medium-low heat, stirring constantly until the berry juice colors the mixture.
  2. Combine cornstarch with pineapple juice or water and stir into the berry mixture.
  3. When mixture is quite thick, remove from heat and pour into a baked pie crust.
  4. Cover with plastic wrap and refrigerate for 2 hours or overnight.

Serves 8.
