Carrot Macaroons
  • 1 c. grated raw carrots, packed
  • 1/2 c. water
  • 1/4 c. honey
  • 1 tsp. vanilla
  • 1 1/2 c. coconut
  • 1 c. oat flour
  • 1/2 tsp. salt
  1. Make oat flour by blending oats.
  2. Mix all ingredients. Let sit few minutes.
  3. Firmly pack dough into a moistened tablespoon or small scoop, and drop on sprayed cookies sheets
  4. Bake at 325 degrees for 20 minutes.
