Walnut Wheat Griddle Cakes
  • 1 c. whole wheat pastry flour
  • 1/3 c. soy flour
  • 1/4 tsp. salt
  • 1 tbsp. baking powder
  • 1 tbsp. Ener-G Egg Replacer
  • 1 1/2 c. soy milk
  • 1 tbsp. honey or maple syrup
  • 1/3 c. nut butter or MoriNu Tofu (don't use low-fat tofu)
  • 1/4 c. chopped walnuts (opt.)
  1. In a large bowl stir together flours, salt, baking powder and egg replacer.
  2. In a blender process milk, honey and nut butter or tofu until smooth.
  3. Pour blender contents into flour mixture stirring to mix well. Stir in walnuts.
  4. Preheat a griddle or large frying pan over medium heat (spray lightly with cooking spray if the griddle does not have nonstick surface).
  5. Pour batter onto griddle, using about 1/4 cup and spreading to about a 4-inch circle.
  6. Cook until tops are bubbly; turn and cook other side until lightly browned.
  7. Makes approximately 3 servings.
  8. Serve these griddle cakes topped with the Mixed Berry Jam
