Oat and Corn Waffles
  • 2 c. cold water
  • 1 1/2 c. quick or old fashioned rolled oats
  • 1/2 c. raw cashews
  • 1/4 c. cornmeal
  • 3 dates
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  1. Preheat waffle iron while mixing batter. In a blender, process all ingredients until smooth.
  2. Pour into heated waffle iron (batter must be thin and bubbly). If batter is allowed to sit, you will need to add additional water and blend again.
  3. Bake 10-12 minutes or until steaming has ceased. Remove to oven to keep warm until all waffles are baked.
  4. Excellent when frozen and reheated. Makes 2 waffles (8 squares).

Delicious served with a fresh fruit topping.
