Old Country Style Muesli
  • 2 1/2 c. rolled oats
  • 2 1/2 c. water
  • 1/3 c. chopped dates
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • 1/4 tsp. maple extract or vanilla (opt.)
  • Juice of 1 lemon
  • 1/4 c. chopped almonds
  • 1/4 c. sunflower seeds (opt.)
  • 1 apple, shredded
  • 2 bananas, thinly sliced or other fresh fruit
  1. Stir together rolled oats, water, dates, vanilla, salt, maple extract and lemon juice.
  2. Cover and refrigerate overnight, if time permits.
  3. Just before serving stir in nuts, apples and banana.

Yields 5 one-cup servings.
