Maple-nut Granola
  • 2 c. date pieces
  • 1/2 c. walnuts, chopped
  • 1/4 c. agave or fruit juice concentrate
  • 1 1/2 c. hot water
  • t tsp. vanilla
  • 1 tsp. maple flavoring
  • 3/4 tsp. salt
  • 12 c. quick rolled oats
  • 1 c. chopped nuts
  • 1/2 c. unsweetened , shredded coconut
  1. In blender, place dates, ½ cup walnuts, agave or juice concentrate, water, vanilla, maple flavoring and salt.
  2. Whiz until smooth. Place oats, nuts and coconut in a large bowl.
  3. Pour blender ingredients over dry ingredients and mix well.
  4. Bake on trays in 150-175°F oven until crisp, dry and golden brown.
  5. Stir frequently for even drying and baking.
