Apple Oats Casserole
  • 2 c. quick rolled oats
  • 1/2 c. raisins
  • 1/2 c. fine, unsweetened coconut
  • 2 large shredded apples
  • 2 c. soy, or nut milk, or water
  • 1 tbsp. date butter or honey
  • 1 tsp. vanilla
  • 1 tsp. salt
  • 3/4 c. water
  1. Combine all ingredients, mix thoroughly.
  2. Soak overnight, then bake in the morning using a casserole dish 45-60 minutes at 350° (Ok to allow to sit only 20-30 minutes and then bake).

Variation: Gently stir in 1 c. of blueberries black berries or cranberries.
