Banana Date Granola
  • 9 c. oats (rolled or quick)
  • 1 c. unsweetened coconut flakes
  • 1/2 c. sunflower seeds
  • 1 c. chopped walnuts
  • 1 c. pitted dates
  • 3/4 c. water
  • 2 ripe bananas (can use frozen)
  • 1 tsp. vanilla
  • 1 1/4 tsp. salt
  1. Combine all ingredients in a large bowl.
  2. Heat pitted dates and water together then blend with 2 ripe bananas (Heat bananas also if frozen)
  3. Mix blended ingredients with dry ingredients in the bowl.
  4. Add vanilla and salt and continue to mix.
  5. Spread on cookie sheet. (1/2” thick)
  6. Bake at 225 degrees for 90 minutes, rotating every half an hour until golden and almost dry.
  7. Store after cooling
