Rice Pudding
  • 2 1/2 c. cooked brown rice
  • 1 1/4 c. soy or nut milk
  • 2/3 c. chopped dates or raisins
  • 1 tsp. coriander
  • 1/4 tsp. salt
  • 1/2 c. canned pineapple chucks (slightly blended)
  1. Mix all ingredients and put in dish.
  2. Bake at 350 degrees for 45 minutes.
