Cashew French-Toast
  • 1/4 c. pitted dates
  • 1/4 c. raw cashews
  • 1/4 c. oats
  • 1 1/2 c. water
  • 1/4 tsp. salt
  • 8 slices of whole wheat bread
  1. Blend dates, cashews, oats, salt and water until very smooth.
  2. Pour into shallow dish and dip bread into batter.
  3. Brown in pre-heated non-stick skillet over medium heat.
  4. French Toast may also be baked on baking sheet in 350 degree oven.

Variation: Use pita bread stuffed with canned peaches or pears, make sure it is canned in natural juices no syrups. Dipped stuffed pita bread into batter and bake.
