Tofu Omelet

  • Tofu Omelet
  • 1/2 c. tofu
  • 1/4 c. rice flour
  • 1 tsp. onion powder
  • 1 large clove garlic
  • 1/8 tsp. turmeric (or 1/4 med. cooked carrot)
  • 1/2 c. cashew (or 2/3 c. rice flour)
  • 1/2 c. water
  • 1 tsp. salt
  1. Blend all ingredients together.
  2. Put in non-stick skillet or fry pan sprayed.
  3. Can add onions, bell peppers, olives, cilantro or parsley according to taste.
