  • 2 c. whole wheat bread flour
  • 2 c. whole wheat pastry flour
  • 1/2 tsp. salt
  • 1 1/4 c. water
  1. Place flours and salt into a large bowl and stir in enough of the water to make a kneadable dough.
  2. Knead for about 5 minutes. Cover dough in bowl and let rest for 15-20 minutes.
  3. Break dough into golf-ball-sized pieces, shaping each one round.
  4. Place ball on floured surface and with a rolling pin, roll into a very thin round, about 1/16-inch thick. Repeat with the remaining balls.
  5. Heat a dry skillet to medium. Cook about 15 seconds each side. Flip again and repeat cooking time.
  6. Stack on a clean towel and keep warm until serving time. Yields 16 chapati.
