Tender Oat Blueberry Muffins

2 c. quick oats
  • 1 c. applesauce
  • 1/4 c. almond butter or peanut butter
  • 1 mashed banana (Frozen or thawed OK)
  • 1/2 tsp. salt
  • 1 tsp. coriander (opt)
  • 1 1/4 c. fresh or frozen blueberries
  • 1 c. date pieces
  1. Mix all ingredients in mixer.
  2. Spoon into lined muffin tins, to make 9 heaping muffins, as they do not rise.
  3. Bake 45 min. at 350 degrees.
  4. For easy removal of paper muffin cups, allow to cool completely, then remove paper.
  5. Best to spray cups with oil spray.
