Simple Muffins

2 c. whole wheat pastry flour
  • 2 c. unsweetened applesauce
  • 3 tbsp. fruit juice concentrate (pineapple is good)
  • 1/2 tsp. salt
  • 1 tsp. coriander
  • 1 tsp. vanilla
  • 1/2 c. raisins or blueberries
  • 2 tbsp. Ener-G Baking Powder
  1. Preheat oven to 350.
  2. Mix all ingredients together.
  3. Stir in the Ener-G Baking Powder last.
  4. Mix quickly and do not stir any more than necessary and put them in the oven.
  5. Bake 30 minutes.

Makes 12 muffins.
